Daring Bakers' January Challenge: Lemon Meringue Pie

This is truly one recipe I would never have tried had it not been for the Daring Bakers! A tart filled with egg yolks and topped with egg whites didn't sound like a very good idea! The host for this month was Jen, and its because of her I baked my first Lemon Meringue Pie! Though am still not not too sure how I like this, but my folks sure liked it. So I might have another go! Also the video posted by Aparna was helpful! Reading on the DB blog a few incidents of 'pools of butter' I decided to cut down the butter by one third, and it wasn't a good idea, because the crust was as far from having a shortbread like texture as could be! It was somewhat hard rather than flaky or crisp. And I also cut the lemon juice by half because I knew no one at my place would like it so tarty, and it tasted just fine. Just that I felt despite the vanilla extract and lemon juice and zest, there still remained a somewhat eggy smell :( But nobody else complained so I guess it was just me. And also, this has nothing to do with taste, but I wonder why my filling looks so pale? Otherwise it was just fine, no runny filling luckily, it set very well. Just have to be careful about the butter the next time I bake this!

Hi Dear :)

I'm not in the group of DBs anymore, however the last challenge I tried was this lemon meringue pie, and I exactly complained about the eggy smell of whole tart for many times on DBs blog :))))

It looks beautiful, but not worthy to the taste to me :)

By the way I can recommend you to use the original pie crust as it is given coz it gives a delicious result. In fact the crust was the only part I liked with this pie :)) The filling makes it soaked in time, but I guess I will use the recipe for my other pies, and tarts :)

I think the paleness is because thew yolks are pale?
It doesn't effect how lovely the pie looks, and I bet it was scrummy!

I think too that your filling is pale beause of the pale yolks. You could have use photoshop. ;-)

I don't think I have ever seen egg yolks that pale! That is where the color comes from, so that is why your filling isn't as bright. Your pie looks great, though!

I think your pie is beautiful, even though it's pale. The yellow color comes from the eggs, but I'm not sure why your eggs are so pale.
It looks like it tastes terrific though!

When I made this I was surprised to find that the yellow color of the filling comes not from the lemon but from the egg yolk. So, as others have noted, pale yolks -> pale filling. Looks great anyway!

oh i would never have thought my yolks are pale! this is only colour i know of.. for yolks.. even i thought the colour would come from the lemons :P

Wow, I've never seen such pale eggs. I didn't even know what they were at first. Are eggs always that pale in India? It may be they are from a different breed of chicken or the chicken eats a different diet. In the US (Europe too I think) our eggs are dark yellow. wow, thanks for the link.. now those yolks look scary to me! i have never seen such a colour for yolks! this pale yellow is the one i have known egg yolks to have all my life :P but i asked my mom and she said that yolks do have that deep yellow colour, and the ones we get here locally are from commercially bred chicken, and thats where the difference comes in..
