not quite danish...


Of all the crazy things I have done, this has to be the craziest. Trying my luck at danish pastry in the middle of Indian summer (did I say trying, oops, i meant pushing!). But then that's what the Daring Baker's are all about. Making you do things you won't normally even think of. I do make croissants sometimes, but never never in summer. I also happen to have bad case of hot hands. And man, did this challenge drive me up the wall or what! If the heat and humidity don't kill you, they sure can finish off your Danish.

Ok, I guess am exaggerating, but the result wasn't anywhere near perfect. But it was good. And it did fill my kitchen with a nice aroma! I used peaches instead of apples.


As soon as I braided it up, the juices started leaking, so the poor braid was in a pool of its juices, which later got burnt black in the oven.

I managed to roll up some extra pastry croissant style. Just for fun.

Yup, even here in Connecticut, the day I made the first batch of dough it was the middle 90s. Not conducive at all to butter laminated dough. So I can only imagine in the middle of an Indian summer...

They still look tasty though!

HA! That really was a challenge, wasnt' it? I'm in Florida - had to wait til late at night to do this project! But, it was worth it. Great job!

Hey, I don't think your Danish looks all that bad. It tasted great, didn't it?
I know what our summers can do. It almost melted my Opera last time. The monsoons saved me this time!

I hate baking in the heat - it makes me cuss ;) But I think you did a tremendous job because your braid looks great! Good on ya for sticking through it even though things may not have gone perfectly. The end-product is fantastic!

I can imagine the difficulty in making this in hot weather. I'm in Australia so making it was not a problem but I had to proof it in a very very low oven.

Your Danish looks and sounds like it was really tasty. Peaches is a great idea, though they'd probably run anywhere. In my temperate part of the world it was 100 degrees the day I made mine, setting a record and I got pretty stressed by the end.
